Creamy Green Dressing (aka Jonah’s Everything Sauce)
Jonah, 2 years old and picky at the time, fell in love with this recipe when his mom tested it for me. She named it Jonah’s Everything Sauce because he ate it on everything—and I mean everything. You will be just as happy as Jonah’s mom when your kids (or you) want to slather your salads, grains, and cooked veggies with it, because it’s at least as nutrient-dense as what you’re putting it on, possibly even more so. We put it on hearty lettuce or arugula with chopped strawberries and some feta. Lemon and fresh herbs give this dressing a zippy, fresh taste and the cashews make you swear there’s cream in it. And yes, it’s green. And Jonah still loves it, many years later.
INGREDIENTS:
MAKES 2 CUPS
1 cup unsalted raw cashews
1/4 cup fresh lemon juice (about 1 large or 2 small lemons)
2 tablespoons extra-virgin olive oil or avocado oil
1 cup tightly packed spinach leaves
1 cup tightly packed fresh cilantro leaves
1/4 cup tightly packed fresh mint leaves
1/4teaspoon salt
DIRECTIONS:
1 For easier digestibility, soak the cashews in enough cold water to cover for up to 4 hours, if you like, then drain.
2 Place the cashews in a blender and add 3/4 cup water. Blend until smooth.
3 Add the rest of the ingredients and blend until the mixture reaches a smooth, creamy consistency. Taste and add more salt if desired. If the dressing is too thick for your liking, add up to 1/4 cup more water, 1 tablespoon at a time, and blend to combine.
4 Transfer to a jar and keep in the fridge for up to 4 days in the refrigerator. It will thicken as it sits in the fridge, so stir in 1 tablespoon of water as necessary.
