Everyday Dijon Vinaigrette

This recipe can serve as your standard daily salad dressing. Use it as is or add in your own creative inspiration, such as fresh herbs, capers, or minced olives for a rich depth of flavor. Give it a sweet hint with some chopped dried fruit, like apricots, cherries, or figs, or even a little jam. Enjoy it on salads or as a marinade for chicken, fish, or tofu.
INGREDIENTS:
MAKES .75 CUP
1⁄2 cup extra-virgin olive oil or avocado oil
2 tablespoons Dijon or stone-ground mustard
2 tablespoons fresh lemon juice 1 -2 teaspoons finely chopped garlic (optional)
1/8 teaspoon salt
DIRECTIONS:
1 Place all of the ingredients in a small jar and add 1 1⁄2 to 2 tablespoons water (depending on how acidic you like your dressing). Seal with a lid and shake vigorously.
Note:
The dressing will keep in the refrigerator for up to 3 weeks.
